Asparagus Frittata

Ingredients:

  • 3 tablespoons unsalted butter

  • 1 sliced shallot

  • 1 finely chopped garlic clove

  • 1 teaspoon salt

  • 1 pound asparagus, tough ends snapped removed, cut into 1-inch lengths

  • 6 large eggs

  • 1/2 cup ricotta cheese (cottage cheese can be substituted)

  • 1 small zucchini, sliced

  • 1 Tbsp minced chives

  • 1/4 teaspoon dried thyme

  • 1 Tbsp minced cilantro

  • 1 cup shredded mozzarella cheese

Directions:

1. Create egg mixture: beat the eggs and ricotta cheese together, then stir in the chives, thyme and cilantro.

2. Heat a 10-inch oven-proof pan over medium heat and sauté shallots and garlic in butter. Stir occasionally, until they are soft and translucent. Add asparagus and zucchini and cook for about 3 minutes.

3. Add egg mixture to the shallots, garlic, butter and asparagus, meanwhile, set oven to broil. Cook until the eggs are almost set, but still runny on top and add mozzarella cheese.

4. Broil for about 6 to 8 minutes.

5. Remove the pan from the oven with mitts and slide frittata onto a serving plate. Cut into wedges, serve and enjoy!
